Eat Healthy This Winter With These Four Seasonal Recipes

Winter brings about a wide array of delicious fruit and vegetables to cook with. Seasonal produce is generally more flavourful, nutritious, and affordable and is also more likely to be grown locally, reducing food miles. Seasonal produce is typically picked at the peak of ripeness, which means it will have more flavour and nutrients than produce that is picked early and shipped long distances. Winter is the perfect time to get in the kitchen and create delicious meals using fresh, seasonal vegetables. Check out some of my favourite seasonal vegetarian meals below!

Roasted Vegetable Soup with Tiny Pasta – VegKitchen

One of my all-time favourite recipes, this warming, smoky, roasted vegetable soup is full of delicious winter vegetables like carrots, celery and turnip. This recipe is extremely flexible, you can use whatever roast-able veggies you have in your fridge, so you can adapt it to use whatever seasonal produce is available. Some of my favourite add-ins are potatoes, zucchini and a head of garlic, which creates a beautiful rich, slightly-sweet garlic taste to the broth.

Avocado Pesto – EatingWell

Tucking into a great big bowl of pasta is the peak of winter warmth, so this pesto recipe using seasonal avocados is sure to add warmth and flavour to work lunches this July. This pesto also makes for an amazing, levelled-up version of avocado toast or to add as a delicious base layer to a slice of bruschetta. The great thing about pesto is that it is versatile enough to use any nut that is on hand. Some great substitutes for the walnuts this recipe calls for are almonds, pine nuts or cashews.

This rich, hearty, winter vegetable stew is perfect to hit any craving for a beefy winter meal, if you want to cut back on meat. This one-pot meal serves twelve and freezes well, meaning that making just one batch will continue to feed for days to come!
