One&Only Wolgan Valley resides on a land rich in history. It is the land of the Wiradjuri people, and shares a rich settlement history. The original farmhouse built has been maintained on the property since 1832, and has seen the likes of Charles Darwin during his trip to Australia in 1836.
The Homestead’s accompanying garden has also been maintained, which today provides fresh, organic supplies to the kitchen, enabling an array of seasonal dining throughout the year. Headed by renowned Australian chef James Viles, One&Only’s restaurants produce completely unique, locally sourced a la carte menus from the Blue Mountains and surrounding regions of Orange, Mudgee and the Hunter Valley. Chef James Viles describes One&Only’s menus as “crafted with honesty, purity and a true sense of place, and reflect the seasons of this beautiful valley”.
For those who enjoy exploring the countryside, roam the canyons atop one of the resort’s beautiful horses, or venture the reserve by 4WD, or explore on foot with the resort’s tailored vibrant bush walks focused on bush ecology, wildlife and cultural heritage.
